Beef & Bok Choy Stir Fry
adapted from Slender Kitchen, while trying to remember how we used to make this dish ourselves.

Ingredients
• 1 pound flank steak, thinly sliced
• 1 pound bok choy, chopped
• 4 green onions, chopped
• 1 cup mushrooms, sliced
• 1 tablespoon garlic, finely minced
• 1 tablespoon ginger, finely minced
• 1/4 cup chicken broth
• 2 tablespoons soy sauce
• 2 tablespoons vegetable oil
• 1/3 cup cornstarch

Directions
➀ Combine chicken broth, soy sauce, garlic, ginger, and cornstarch in bowl, stirring well.
➁ Add 1 tablespoon vegetable oil to a frying pan over high heat. Add the beef and cook for 1-2 minutes until browned. Remove meat and set aside.
➂ Add remaining 1 tablespoon vegetable oil to frying pan, add vegetables and cook for 3-4 minutes.
➃ Turn heat down to medium and add the sauce from step 1. Cook for another 3-4 minutes until sauce thickens and vegetables are tender.
➄ Add beef back to pan and cook until steak is to your liking (another minute or two at least).
➅ Serve with rice!
